Because your friends know that you have some knowledge about wine, you feel the anxious gaze of several pairs of eyes upon you. Have no fear! The key to you being succesful “under pressure” is preparedness. First of all, engage in a conversation with your friends about what kinds of wines they generallly prefer. Keep your choices simple. For example, do they prefer red or white wine? Sweet or dry wines?etc.What you’ll probably find out is that your friends will have mixed answers and preferences. That’s o.k., you can order two bottles of wine that most closely correspond to the agregate of your friend’s preferences. Next, ask what entrees your friends are having. While you don’t have to stick to the traditional “rule of thumb” of having white wine with poultry and fish, and red wine with beef and pork, you’ll probably end up ordering one bottle of white wine and one bottle of red wine to be on the safe side.

Your wine steward is always a great asset when ordering wine at restaurants. Because you prepared yourself with your friend’s entree choices and general wine preferences, you can now relay that info to your wine steward. Be sure to also let your steward know what price range you’re interested in paying. When discussing your wine selections with the steward, try to translate your friend’s preferences into terms that describe wines. Terms such as “semi-sweet”, or “fruity”, for example better enable the steward to make suggestions that are apppropriate for your group. Other terms to use are “dry” or “citrus.” You don’t have to know every term in the book, however a few key terms are helpful.

So now you’ve ordered, but you’re not out of the “woods” yet. When the wine arrives, you’ll be expected to sample it and make sure it’s ok. When the steward presents the wine to be sampled, hold your glass at a comfortable level and swish the wine up the sides of the glass. This helps to release the aromas. Make sure that the wine isn’t “corked.” While rare, “corked” wine happens and needs to be replaced.

Take a small amount of wine and move it over your entire tongue so that all your taste buds come in contact with it. The trick to tasting wine is to help the aromas of the wine to enter your nasal passageway at the rear of the throat.

If the wine is satisfactory, nod to the steward approvingly. Your friends will then be served. At this point, you’re sure to be a “hero” with your friends! Nothing enhances a good meal like an appropriate wine. And remember, when in doubt ask the steward for advice, they are professionals.

It is also arguably the oldest continuously brewed beer style in the world, with records suggesting that the region’s Celtic and Germanic tribes began brewing ale from wild grains at least 3,000 years ago.Around its native area it is often served from wooden casks, and has a respectable alcohol content of 4.7 to 5 per cent.

Dunkel – Commonly associated with Bavaria, this style of dark-coloured lager is today, however, widely available across Germany and beyond. Given its colour by the use of dark malts, it is regarded as the beer style from which most others evolved. It is made distinctive from paler lager beers by the use of darker malts for colour and a richer flavour.

Kolsch – If Altbier belongs to Dusseldorf, Cologne can rightly call Kolsch its native brew. While in Britain pale ales were an offshoot of the originally more common brown ales, so it is with Alt and Kolsch. Despite being pale, its brewing method is different from that of lager, and its fruity tastes give it more in common with a British pale ale than a lager.

Lager(bier) or Pils – The one we all know. But rather than describing the style of beer, ‘lager’ traditionally has more to do with how a beer is matured, rather than how it is produced. The word is the German word meaning ‘to store’. The common associated term ‘Pils’ describes a clear, moderately fizzy lager. The type was first produced in the Czech city of Plzen (Pilsen) in the 19th century, and 160 or so years ago, adopted by the Germans before being reinterpreted around the world.

Rauchbier – Translating from the German literally as ‘smoke beer’, this is another Bavarian style. Its name comes from the use of malts which have been smoked – in much the same way as they often are in Scotch whisky production – over an open wood fire. The finished beer contains extra hops to balance this smokiness, and has a very deep, assertive flavour.

Weissbier – Literally ‘wheat beer’, in which the malt comprises at least 50 per cent, and often up to 70 per cent, wheat. Along with the use of a distinctive yeast type, this produces a beer which has notable tastes of cloves, banana, spices, and even bubblegum. In order to keep this complex flavour, hops are only added sparingly. The distinctive foamy head of many bottled Weissbiers is produced by adding live yeast to the bottle, so that the beer continues to ferment. It is the remains of this yeast which also gives many Weissbiers their cloudy appearance.

Redwood is a common name for a group of very large evergreen trees of the Sequoia family Taxodiaceae. Based on study on fossils of wood species, it is believed that there used to be at least 15 different species of redwood but nowadays, only 3 has survived. They are sufficiently different to each other that they are classified as 3 separate genera: the more abundant Sequoia sempervirens (Coast Redwood); the great Sequoiadendron giganteum (Giant Sequoia); and the endangered Metasequoia glyptostroboides (Dawn Redwood) of China.

The Giant Sequoia is one of the largest and oldest of all living things. Some are known to have lived 3,000 years and while not as tall as the coast redwood, it is more massive. The wood of this tree is similar to that of the redwood, but is lighter in weight and more brittle. Even though it is considered the largest tree in the world owing to its enormous mass, its fibrous and brittle nature makes it unsuitable for custom wine cellars or any type of construction. Very little of it is left to be cut for lumber and just the mere felling of a giant sequoia wastes so much wood because it usually shatters on impact.

Dawn redwood is a deciduous tree closely related to coast redwoods and to the swamp cypress. Although the shortest of the redwood family, it can grow to at least 200 feet in height. The genus Metasequoia used to be the most abundant of the redwood family but now it is considered to be critically endangered. Thought to have been extinct during the Miocene, it was not recognized in fossils as a separate genus of the family until a living tree was discovered and eventually studied during the 1940s. Due to its scarcity and endangered status, it is not a viable source of wood for customized wine cellars.

Among the three, the Coast redwood is the most important source for timber. Generally known as the world’s tallest tree, it averages from 200 to 300 feet in height. Often the girth of a redwood’s trunk measures from 20 to 25 feet, and it may increase by as much as an inch every year. Specimens aging between 1,500 to 2,200 years old are not rare. A very resilient tree, the coast redwood reproduces rather quickly by sprouting new trees from the roots. Unlike other coniferous trees, the coast redwood regenerates after being felled, producing vigorous stump sprouts which reach tree size in a relatively short amount of time. This majestic evergreen requires a heavily humid climate so it does not grow farther inland than the 30-mile reach of the damp sea fog.

Coast redwoods are sought after for their handsome, straight-grained, durable wood. This tree has a narrow crown of branches that begins about a third of the way up its trunk. Its sapwood ranges from pale yellow to white and the inner heartwood can be light red to mahogany. Durable, workable, shape retaining and impressively resistant to decay, the wood is frequently used for interior wine cellar paneling and for special outdoor carpentry works, such as doors, sills, and shingles. Redwood burls, which grow on the tree’s trunk, are used in making veneers for wine cellar doors, table tops, bowls, and other products.

Rightfully chosen as California’s state tree, Coast Redwood is the only specie of redwood suitable for building customized wine cellars. This type of wood species is naturally resistant to decay and insects that is why they are widely considered as maintenance-free wood. What is more, it is less susceptible to warping and shrinking so it’s ideal for wine cellar doors and wine racks. Coast redwood offers a wide range of textures, colors and patterns that enhances your wine cellar’s aesthetic qualities. All Heart Redwood comes from the inner core of the tree and is characterized by its rich reddish brown color and consistent grain. Premium Redwood is extracted from the tree’s outer core and offers a lot of color variations that gives character to your custom wine cellar. Even when left unfinished, both types of wood products can withstand the typical humid conditions inside your custom wine cellar because of the natural preservatives redwoods contains. Of course finishes are handy and makes your wine rack displays, wine cellar doors and wine cellar flooring last longer. Coast redwood provides excellent foundation for finishes because the grain contains little pitch and resin.

You normally don’t stain redwood because of its beautiful, consistent grain. But if you have to, here are a few basic tips in staining:
